Known as ‘a village within a village’, Thyme is driven by a love of nature, beauty and conservation. Lovingly restored and brought to life by Caryn Hibbert and her family, the estate is now open to guests, who can discover its state-of-the-art cookery school, curated shops and fabulous restaurants and bars. Accommodation ranges from cosy double bedrooms to supremely elegant suites. Every room is impeccably decorated and provides guests with access to the house honesty bar (so you can help yourself to a glass of wine or nibbles if you’re peckish).

The Ox Barn at Thyme
The 19th-century former oxen house is now The Ox Barn restaurant under the direction of Head Chef Charlie Hibbert. A state-of-the-art piece of agricultural architecture at its conception, Caryn Hibbert worked meticulously to preserve the soaring archways and original Cotswold stone rubble walls. Now, it's a modern restaurant with a contemporary bar and seven-and-a-half metre Charvet open kitchen.
