Ox Barn Restaurant, Exquisite Interiors, Cookery School, Meadow Spa
Nestled in the heart of the Cotswolds and surrounded by grazing livestock, Thyme is a charming country estate that you’ll never want to leave…
Known as ‘a village within a village’, Thyme is driven by a love of nature, beauty and conservation. Lovingly restored and brought to life by Caryn Hibbert and her family, the estate is now open to guests, who can discover its state-of-the-art cookery school, curated shops and fabulous restaurants and bars. Accommodation ranges from cosy double bedrooms to supremely elegant suites. Every room is impeccably decorated and provides guests with access to the house honesty bar (so you can help yourself to a glass of wine or nibbles if you’re peckish).
Thyme is also home to incredible gardens. Stroll through the working garden and orchard (which supplies flowers for Thyme, food for the kitchens and herbs for the spa) or find your own quiet little corner to sit and relax on a summer’s day.
If it’s retail therapy you seek, why not treat yourself to some sustainable homeware or a garment from the on-site fashion boutique? Alternatively, take a little slice of Thyme home with you by acquiring a one-off antique treasure…
The Ox Barn at Thyme
The nineteenth-century former oxen house is now The Ox Barn restaurant under the direction of Head Chef, Charlie Hibbert. A state-of-the-art piece of agricultural architecture at its conception, Caryn Hibbert worked meticulously to preserve the soaring archways and original Cotswold stone rubble walls. Now, it's a modern restaurant with a contemporary bar and seven-and-a-half metre Charvet open kitchen.
