Chef Adam Handling is no stranger to success. So, when he set his sights on Carbis Bay’s golden shores in 2021, we knew we would be in for a treat. The ironically named Ugly Butterfly restaurant is a thoroughly contemporary affair, with huge floor-to-ceiling glass windows looking out over one of the most impressive vistas in Cornwall. However, despite its polished appearance, the restaurant showcases Handling’s passion for hyper local food and minimising food waste.

The menu includes intriguing dishes like ‘raw and pickled garden vegetables with whipped smoked tofu’ or ‘retired dairy cow tartare with girolles and beef fat’. The bar also uses trims and offcuts from leftover ingredients to create delicious drinks and innovative snacks. We’re particularly intrigued by the sound of the cheese doughnuts and the waffles with caviar….
